Banana and Egg Pancakes (2 ingredient pancakes)

Ingredients

  • 1 banana
  • 2 eggs
  • 1/8 baking powder (optional)
  • 1/8 cinnamon (optional)

Directions

  • Heat skillet to medium heat
  • Mash banana
  • Add eggs to the mashed banana and mix well
  • Spray pan with non-stick cooking spray
  • Pour batter of your desired size into the pan.  Cook until bottom set (about 30-60 sec), flip, cook an additional 60 sec or less.  Serve with sweetener of your choice.  Enjoy!

Yield: 1 serving  Calories:  245  Protein: 12g Carbs:  27g  Fat:  11g

The possibilities with this recipe are endless.  You may choose to add a protein powder, PB2, nuts, berries, etc.  Be creative!  Enjoy the food you eat.
